No, not at all: these are only our people who have contact with clients. The complete team consists of 23 members of staff who are collectively responsible for providing our customers with deliciously silken carpaccio and beautifully tender pulled meat products.
The team of butchers who prepare the technical cuts that come in and make the carpaccio rolls. This team is also responsible for the cooked pulled meat products. Then there are two other teams that slice carpaccio. They have the use of three Marel industrial slicers with underleaver conveyor belts.
Working in two shifts, the carpaccio is sliced from 6 in the morning until midnight.
